Rum Pineapple Dessert (Pineapple Foster)
By Michele Parkinson
Add this to your summer dessert recipes and your guests will be amazed by your culinary talents! This recipe is so easy and so delicious! We had almost become obsessed with it a couple summers ago, and were having it at least once a week.
I have made it on the grill and on the stove. Both ways are heavenly.
1/2 Cup rum (light or dark)
1/2 Cup packed brown sugar
2 tsp. ground cinnamon (plus extra for dusting)Cooking sprayVanilla ice creamOne cored pineapple cut into 6 or 8 rings (to your preferred thickness)
Step One Mix together rum, brown sugar, and cinnamon in small mixing bowl.
Step Two Lay pineapple rings in a single layer in a long glass dish or and pour the rum mix over them. Soak for at least 15 minutes, flipping the pineapple halfway through.
Step Three Strain remaining rum sauce from glass dish of pineapple, and transfer to a small saucepan. Bring rum sauce to a simmer over medium-high heat, then reduce heat to low and simmer for about 6-8 minutes, or until reduced by half. Set aside. (Next step is done while sauce is simmering)
Step Four While the sauce is simmering, heat a grill pan or saute pan over medium-high heat until hot. Lightly grease the pan with cooking spray. Add pineapple slices in an even layer and cook for 1-2 minutes per side until browned and grill marks appear. Transfer to a serving plates, and set aside.
Step Five Top each pineapple ring with a scoop of ice cream and drizzle with rum sauce.
Optional: Sprinkle with more cinnamon if desired. Serve immediately.
Notes: You may need to sauté pineapples in 2 batches.
Also: There are many sources on pinterest for this recipe. I have had it in my files for quite a while and cant remember who the original source was.

Why I love this recipe.
It's simple and doesn't have a lot of ingredients and yet it tastes like a meal you would order in a nice restaurant and it is roasted in the oven all at the same time.

These are so sweet & delicious, you would never know there isn't any sugar or sweetener added to the recipe. They are the perfect quick breakfast or snack and taste great straight from the fridge. This recipe reminds me of something my mom used to make that was more of a cookie. I'll be excited to hear what you think and hope you give it a try. They have become a fixture in our house.
